For some fun info, and to make people appreciate the modern age better. Yeast was first 'discovered' in 1680 by a dutchman named Anton van Leeuwenhoek. They were recognized as a fungus in1837. In 1857, Louis Pasteur began discovery's on how yeast added to the brewing process. Think about that next time a recipe tells you to use a packet of active dry yeast.
